Abstract
Background: Canteen in university or school can serve as an important setting for nutrition and health promotion. It is a must for canteen operators or concessionaires that there will be proper sanitation in relation to food preparation and handling. Moreover, good hygiene and safe water are also essential to ensure good health and safe eating of the customers. The purpose of this study was to investigate factors associated with imple�mentation of hygene sanitation canteen in Universitas Jambi, Sumatera, Indonesia.
Subjects and Method: A cross sectional study was conducted in in Universitas Jambi (Mendalo Campus), Sumatera, Indonesia. A sampel of 46 of canteen staffs was selected by total sampling. The dependent variable was canteen hygiene sanitation. The inde�pendent variables were knowledge, canteen environment, trainig, and workers support. The data were collected using questionnaire and observation. The data were analyzed using a multiple logistic regression.
Results: High knowledge (b= 6.74; 95% CI= 0.54 to 1.01; p< 0.001), clean environment (b= 0.71; 95% CI= -0.17 to 0.36; p= 0.480), and workers support (b= 0.15; 95% CI= -0.3 to 0.34; p= 0.881) positively affected the implementation of canteen hygiene sanitation. Untrained workers negatively affected the implementation of canteen hygiene sanita�tion, but it was statistically non-significant (b= -0.23; 95%CI= -0.35 to 0.27; p= 0.819),
Conclusion: High knowledge, clean environment, and workers support positively affect the implementation of canteen hygiene sanitation. Untrained workers negatively affects the implementation of canteen hygiene sanita�tion, but it was statistically non-significant.
